Wholesome Cook recently posted a recipe on her blog for fluffy ricotta pancakes (with the word fluffy in front you probably guessed they aren’t gluten free) with data and banana butter which caught my eye. I have made gluten free pancakes before but only from the Vitarium packet mix, however I had heard that buckwheat flour is very good for pancakes. I therefore decided to give these ones a go substituting the self raising flour for buckwheat flour and baking powder.
The buckwheat version of the pancakes come out a lot browner due to the colour of buckwheat flour however they were very More >
One day during the holidays we decided to have people over for brunch. We were having bacon and eggs but Mum also made some apple and oat muffins which weren’t gluten free. I therefore decided to make up the Vitarium Crumpet Mix I had in the cupboard.
I made the crumpets the night before because you have to let them sit for 90mins. However you are supposed to toast them before you eat them so it didn’t matter.
The crumpets were amazing, even the non coeliacs of the family said they tasted like crumpets. To prove how good they are More >
I was going to my parents place down the coast for Christmas drinks and Mum was making mini chive pancakes with sour cream and smoked salmon, a recipe taken from the Coles Christmas magazine. I remembered that I had a sample packet of Vitarium‘s pancake mix in the cupboard and therefore decided to make a few gluten free pancakes for myself.
I made up the pancakes, however added quite a lot more milk than the directions on the packet suggested as they were too thick. I also hadn’t realised that you were supposed to add chives to More >
I recently received a package in the mail from Lifestyle Bakery, who have a number (20 to be exact) of gluten free products including bread, muffins, pizza bases, and seasonal products. They cater for a number of dietary requirements and therefore also have dairy free, soy free, yeast free, egg free etc products (you can search products on their website by dietary need here). The package I received contained a pack of Christmas puddings, bread crumbs and a loaf of their Chia Seed bread.
I was very excited to try the Christmas puddings having recently just made two Christmas cakes, a More >
As discussed in yesterday’s post I decided that as well as making the Vitarium Christmas cake I would try and make one from scratch. The recipe which I used was given to me by my Aunty and it was very easy – almost as easy as making the Vitarium Christmas cake. I left it in the oven for a bit longer than I should have, worried that it wasn’t sticking together properly however once I took it out of the oven and it cooled down it did so.
Compared to the Vitarium cake this Christmas cake is more moist and has a More >
I have never made a Christmas cake before leaving that up to my highly practiced Mum and Aunty. However, this year it is up to me to make the gluten free Christmas cake. I was given a few recipes however I also received a package in the mail the other day from Vitarium which contained a gluten free Christmas cake mix.
I decided to make both the Vitarium Christmas Cake and a Christmas cake from scratch using a recipe from my Aunty as I also needed to take some cake to work (stay tuned for another post on making More >
