Wholesome Cook recently posted a recipe on her blog for fluffy ricotta pancakes (with the word fluffy in front you probably guessed they aren’t gluten free) with data and banana butter which caught my eye. I have made gluten free pancakes before but only from the Vitarium packet mix, however I had heard that buckwheat flour is very good for pancakes. One day during the holidays we decided to have people over for brunch. We were having bacon and eggs but Mum also made some apple and oat muffins which weren’t gluten free. I therefore decided to make up the Vitarium Crumpet Mix I had in the cupboard.

I was going to my parents place down the coast for Christmas drinks and Mum was making mini chive pancakes with sour cream and smoked salmon, a recipe taken from the Coles Christmas magazine. Product review: Lifestyle Bakery Christmas Puddings

I recently received a package in the mail from Lifestyle Bakery, who have a number (20 to be exact) of gluten free products including bread, muffins, pizza bases, and seasonal products. They cater for a number of dietary requirements and therefore also have dairy free, soy free, yeast free, egg free etc products (you can search products on their website by dietary need here). The package I received contained a pack of Christmas puddings, bread crumbs and a loaf of their Chia Seed bread.

Recipe: Christmas Cake

As discussed in yesterday’s post I decided that as well as making the Vitarium Christmas cake I would try and make one from scratch. The recipe which I used was given to me by my Aunty and it was very easy – almost as easy as making the Vitarium Christmas cake. I left it in the oven for a bit longer than I should have, worried that it wasn’t sticking together properly however once I took it out of the oven and it cooled down it did so.
