Deventer Koek – Dutch spice cake (gluten free)

Mum and I got talking about International Day (a lot of schools get their students to bring in something that relates to their culture) last night and what she should bake to take to work. Since my Mum’s parents are from the Netherlands we started thinking about Dutch options (we decided that there are more exciting Dutch options than Kiwi).

Lone Star, Newmarket, New Zealand

While in Auckland I visited Lone Star in Newmarket for dinner. My friend checked in advance and found that the gluten free dishes were labeled on the menu and others could be made gluten free.
Lone Star is a cowboy themed pub type restaurant, though it is quite a lot more expensive than your basic pub. It is dimly lit with pictures all over the walls.

Maple pudding

Last month for cake day at work my colleague gave us a couple of options (of which I can’t remember) but we decided on the maple pudding. There was just one problem, my colleague had never made a gluten free version of it before. She asked me if I had a gluten free vanilla flavoured cake recipe, which I didn’t, but we both decided that using my gluten free cupcake recipe should work for the base.
My work colleague is from Quebec and she said that this cake is best if made with real maple syrup, though apparently you can’t get it More >
