Berry, granola and yogurt parfait

Looking for a quick and simple dessert that will wow your guests? Look no further than this berry, peanut butter granola and yogurt parfait. Best of all it’s sugar free!
Ingredients
- 1tbs peanut butter (the 100% peanut, no sugar kind – crunchy is best)
- 1/8 cup desiccated coconut
- 1/2 cup oats (gluten free)
- Yogurt (I used natural greek yogurt)
- Berries (I used black forest fruits – blackberries, black currants, cherries, morello cherries – which I defrosted and left to cool)
All you need to do is…
- Pre-heat your oven to 180 degrees Celsius

There is a really awesome website in Canada, Well.ca, which has a great selection of gluten free foods and delivery is free! Whilst there is a pretty good selection of gluten free foods available at the two supermarkets in Banff there are some things I just cannot get my hands on. For these products I turn to Well.ca.
It was on Well.ca that I first discovered these Quinoa Burger Patties from GoGo – since then I noticed that they also stock them in one of the local supermarkets which is great.

I am going to leave you waiting a little longer before I let you know how I have gone since the end of week 2 with my I Quit Sugar journey . In the meantime I am going to tell you about my favourite I Quit Sugar snacks to date.
Firstly I have been purchasing sliced roasted chicken from the deli and eating it on rice cakes with avocado, sliced tomato and salt and pepper. I absolutely love the flavour of this and it is a great healthy, filling snack.

Here is my wrap up of week 2 of quitting sugar (this was obviously written a few weeks ago now!):
So week 2 was always going to be a challenging one, but I have to say I went into it with a pretty positive mindset. So why was week 2 going to be challenging? Well in the scheme of I Quit Sugar it’s the week you start adding more (good) fat to your diet so that definitely wasn’t the hard part. The hard part was that my week 2 happened to fall over Easter.

One of the first things I went looking for when traveling around the US was a bar that I could have in my handbag for when I needed a snack. I was excited to find the LARABAR range in Whole Foods and Trader Joe’s (more on these in another post!).
The LARABAR range are a blend of unsweetened fruits, nuts and spices containing 100% whole food and no more than 2 to 9 ingredients. This means that they are all gluten free!
