Italian cooking demonstration by The Coeliac Society of NSW
When I was first diagnosed with coeliac disease the best advice that was given to me (thanks to my aunt) was to join my local coeliac society. After doing a bit of research about The Coeliac Society of NSW I joined straight away. One of the things that caught my eye were the events that the society run including information sessions (for newly diagnosed coeliacs, or those who wish to update their knowledge) and cooking demonstrations.
I recently attended an Italian food cooking demonstration and not only was it great to learn how to cook a number of Italian dishes gluten free, but it was a chance to meet other coeliacs to share tips and tricks. We also got to try all of the food that was cooked on the day and let me tell you it was delicious!
I wont post all of the recipes here as I plan to re-create most of them, however here is a sneak peak of some of the dishes that were cooked on the day.

I like the look of the fettuccine with lemon ricotta sauce and the ricotta balls – as long as they are not deep fried though. I’d spray them with olive oil and bake them if possible.
I haven’t joined the Coeliac Society because 90% of the food I eat is low carb/paleo, which is already gluten free.
I can’t believe how many things were cooked in a one day demonstration!

The ricotta balls weren’t deep fried – they were done in the fry pan, however I am sure they could be done in the oven – I might try that when I re-create them!

I joined the NZ Coeliac society for information sessions, getting together with other Coeliacs and learning more about gluten free food. But I’ve got nothing like that from them yet.
