Recipe: Grilled asparagus and potato salad
Yes I am one of those people that has a meal at someones house and then begs for the recipe over and over again until I get it. For this recipe I was lucky enough to be staying at my aunties house for a couple of nights so I could write it down myself guaranteeing I got it straight away.
This salad is so simple to make but it tastes delicious. If you want you can add some grilled chicken to the salad to make it a complete meal.
Another great thing about this salad is that it not only tastes great but it also looks great making it perfect for a dinner party.
Here is how to make your very own grilled asparagus and potato salad
Salad ingredients
- 500g asparagus
- 1 red onion, sliced
- 500g potatoes
- 1T capers
- 2 eggs, hard boiled and chopped finely
- 1 red onion, slice and fried
- 150g feta, crumbled
- Handful parsley
Dressing
- 50ml olive oil
- 20ml red wine vinegar
- Lemon juice to taste
- Salt and pepper
Method
- Fry the asparagus and red onion
- Boil the potatoes then fry them and cut them
- Make the vinaigrette by combining olive oil, red wine vinegar, lemon juice, salt & pepper
- Arrange all ingredients on a platter and pour over the dressing
