Chilli Jam
My Mum made a huge batch of chilli jam just before Christmas as we were having family staying and she decided it was a much cheaper option.
I absolutely love this chilli jam – it can be used on sandwiches, served with meat patties, used on burgers and the list goes on. Needless to say the chilli jam didn’t last long after Christmas and therefore I decided to make another batch on the weekend.
It is so simple to make and is much much cheaper than buying it.
To make your own chilli jam all you need to do is…
Ingredients
- 3 large red onions
- 1 tbs salt
- 2 red capsicums
- 1 cup cider vinegar
- 1 cup white sugar
- 3 tbs sweet chilli sauce
Method
- Peel, halve and finely chop the onions. Place in a large bowl and sprinkle with salt. Stand for 1 hour. Rinse with cold water and drain well.
- Half and seed capsicums and cut into thin strips
- Heat vinegar and sugar in a large pan, stirring until sugar has dissolved. Add onion and capsicums and bring to the boil. Reduce heat to a simmer and cook for 45 minutes until most of the liquid has evaporated. Add chilli sauce and stir until mixture is thick and syrupy. Spoon into sterilised jars (I just soaked the jars in hot water) and seal.
