Roast vege, chicken and haloumi salad
This recipe is a mix of a number of different recipes which I got inspiration from to create my own roast vege, chicken and haloumi salad.
It is a really easy, tasty salad and can be adapted depending on your tastes (e.g. use feta instead of haloumi).
Though, this is how you make my version of the salad:
- Cut up some fresh beetroot, capsicum, red onion, zucchini, eggplant and pumpkin and bake in the oven until the pumpkin is mushy (this adds to the flavour of the salad)
- Coat some sliced chicken breast in peri peri seasoning and fry
- Fry in a little olive oil some beans, walnuts and haloumi
- Make the salad dressing by mixing together 2tbs lemon juice, 1tsp french mustard and a little olive oil
- Toss everything together on top of a bed of spinach leaves (or mixed lettuce also works!)
This salad is an amazing mix of flavours.
