Spatchcock with white wine, lemon and rosemary
With the spatchcock I received from Game Farm I decided to cook something reasonably simple and let the flavours of the bird come out. I therefore decided on the recipe from Game Farm’s website, spatchcock with white wine, lemon and rosemary.
The recipe was simple and quick to prepare and the flavours were delicious. Before receiving my package from Game Farm I had never considered cooking with any other bird except chicken (and turkey for Christmas). It was great to experiment with something new and I would love to cook with spatchcock again.

Spatchcock with white wine, lemon and rosemary
Ingredients
- 2 Spatchcock
- 2 tablespoons olive oil
- 2 cloves garlic, crushed
- 2 sprigs fresh rosemary
- 125ml white wine
- Juice of half a lemon
- Salt and pepper to taste
Method
- Cut Spatchcock into quarters.
- Heat the olive oil in a fry pan over medium heat and add the Spatchcock. Sauté gently until lightly golden (about 5 minutes). Remove from pan.
- Add garlic and rosemary leaves and cook gently until garlic softens, about 1 minute (do not allow garlic to burn or it will become bitter).
- Add white wine and lemon juice and bring to a simmer.
- Add Spatchcock pieces to pan and turn heat to very low. Cover with lid and cook gently for about 15 minutes or until just cooked. Remove Spatchcock and keep warm.
- Turn heat up and bring pan juices to a boil. Reduce until jus thickens (you may need to add another splash of white wine) and pour over Spatchcock.
