Mum and I got talking about International Day (a lot of schools get their students to bring in something that relates to their culture) last night and what she should bake to take to work. Since my Mum’s parents are from the Netherlands we started thinking about Dutch options (we decided that there are more exciting Dutch options than Kiwi).

Almond Cake

We recently had an Italian house warming party and I was in charge of making an almond cake. Let me tell you now that the recipe I chose (well my Mum chose, telling me it was a really easy cake to make….) takes a lot of work and makes a rather small cake.
The recipe is taken from The Australian Women’s Weekly Italian Cooking Class Cookbook and the final cake looks pretty spectacular and it also tastes amazing (I would have been very disappointed if it didn’t after all the work I put into it!).

Recipe: Christmas Cake

As discussed in yesterday’s post I decided that as well as making the Vitarium Christmas cake I would try and make one from scratch. The recipe which I used was given to me by my Aunty and it was very easy – almost as easy as making the Vitarium Christmas cake. I left it in the oven for a bit longer than I should have, worried that it wasn’t sticking together properly however once I took it out of the oven and it cooled down it did so.

I am an avid reader of Not Quite Nigella’s blog, all her recipes and adventures look amazing, to tell you the truth I envy her and her adventures. However up until now I haven’t got around to trying any of her recipes, mostly because I haven’t done much baking up until the last month, and also because I have had trouble re-creating glutenous recipes in the past (e.g. the scones I made last weekend which didn’t rise!).
