Yes I am one of those people that has a meal at someones house and then begs for the recipe over and over again until I get it. For this recipe I was lucky enough to be staying at my aunties house for a couple of nights so I could write it down myself guaranteeing I got it straight away.

I dreamt of Hot Cross Buns last night… it may have been because I baked some before going to bed and the smell was wafting through the house.
There is nothing I love more at Easter time than the smell of Hot Cross Buns and after spotting this recipe on a fellow gluten free blogger’s blog I decided I had to try making my own. I have never made Hot Cross Buns before, even when I wasn’t coeliac, however there were many years of my life where I would only eat the fruitless Hot Cross Buns anyway.

Recipe: Gluten free version of Not Quite Nigella’s Lumberjack cake with maple butterscotch coconut topping
I am an avid reader of Not Quite Nigella’s blog, all her recipes and adventures look amazing, to tell you the truth I envy her and her adventures. However up until now I haven’t got around to trying any of her recipes, mostly because I haven’t done much baking up until the last month, and also because I have had trouble re-creating glutenous recipes in the past (e.g. the scones I made last weekend which didn’t rise!).
I had a bit of free time on the weekend and decided I wanted to do some baking. Mum suggested that I bake something that could be put in the freezer for Christmas time as she is starting to freak out a little with all the baking she has to do as we are hosting Christmas this year, and with all the family in NZ they wont be able to bring any baking with them!

Here is a recipe that is wheat free, gluten free, low carb, high protein and low GI and still tastes amazing!
Though the recipe I took it from calls it a lasagna it is really a moussaka as it uses layers of eggplant instead of lasagna pasta sheets, making it ultra healthy.
I made it with chicken mince though you can also make it with beef mince. However, once you add the red wine, carrot and other ingredients you could almost swear that it was beef mince (as you will see in the photo below!)

I was introduced to this recipe by a club O2 member when we were away for the weekend doing an AROC Adventure Race. Everyone loved it so much that we convinced her to make it for us again the next night. The brownies are very rich but very tasty, oh and did I mention very bad for you! However, we are all allowed a little indulgence every now and then right!?
The brownies are great warm or cold and you can serve them with icecream if you have a real sweet tooth!
