Gluten free lemon tart

Lemon custard tart reipe
Rather than making my own pastry I used the Sweet Shortcrust Pastry I had in the freezer from The Pastry Pantry. The tart was reasonably easy to make, however my sister gave me a fair bit of slack when it came out of the oven as it seemed there was a bit too much liquid making it rather sogggy. Though everyone enjoyed the tart and most even went back for seconds. More >
Salmon, roasted red pepper and zucchini pie with rice pastry
Feb 16th
Mum had her Beach, Bach, Boat, BBQ recipe book open at this recipe for weeks and I finally got around to making it (for those non Kiwi’s reading this a bach is a holiday house and is pronounced batch).
Recipe
I realised I didn’t have any gluten free pastry, however I remembered having seen a recipe in Sue Shepherd’s recipe book, ‘The Gluten-free Kitchen’ for a rice crust. I therefore dug out the cookbook and used the base of her Rice-Crusted Cheese and Bacon Quiche for the pie.
While the pie is a little fiddly to make, it is definitely worth it and More >
Gluten free muesli biscuits
Feb 11th
I go through stages with food, I will eat the same thing for breakfast everyday for a month and then I will get bored of it and move onto something new. I went through a stage of eating muesli for breakfast everyday buying my muesli in bulk (bags of six) online because it was cheaper and free postage! However very soon after receiving a six pack of muesli a few months ago I decided that I needed a change. Not the best timing you could say, and the six bags of muesli have subsequently been sitting in the pantry since.

Olive and Fetta Veal Steaks
Feb 3rd
With all the hot weather we have been experiencing in Sydney recently we have been trying to avoid cooking inside and using the oven too much. Therefore on Sunday we were deciding what we could cook on the BBQ for dinner.
I had a flick through my favourite cookbook at the moment, “The Gluten-free Kitchen” by Sue Shepherd, and came across these Olive and Fetta Veal Steaks. The great thing about this cookbook is that you don’t need a million and one ingredients for each recipe.
For these steaks you do need to marinate them for at least three hours so make More >
Gluten and dairy free orange cake
Jan 9th
It was my friends birthday and I wanted to make her a cake. She has a dairy allergy and as I wanted a cake that I could also eat (is that so bad?) I needed a dairy and gluten free cake. I had a flip through my new recipe book, ‘The Gluten-free Kitchen’ by Sue Shepherd and was delighted to discover that there was a recipe for such a cake, what Sue calls ‘Decadent Orange Dessert Cake’.

I was slightly concerned at first as a couple of months ago I attempted a cake with whole oranges More >
Recipe: Banana Hazelnut Cake
Jan 4th
I was given Sue Shepherd’s recipe book, ‘The Gluten-free Kitchen’ for Christmas and have already made two cakes out of it. The book has wonderful photos and easy recipes that don’t involve too many ingredients.
For my Mum’s birthday I decided to make the Banana Hazelnut Cake. I was intrigued to see that the recipe included 150g mashed potato (instead of flour), however the forward of the recipe actually notes not to be alarmed about this unexpected ingredient.
The cake turned out amazing and everyone highly enjoyed it – some even going back for seconds – and you wouldn’t even realise that More >
